Ingredients

Serves : 4
  • 2 tbsp oil


  • 1/2 cups onions(sliced)


  • 2 tsp pepper(minced)


  • 1/4 tsp pepper


  • 3/4 cups mushrooms(sliced)


  • 1/2 cups carrot(matchstick-cut)


  • 1/2 cups green peas(frozen)


  • 1/2 cups corn


  • 4 cups cooked basmati rice(chilled)


  • 1 nos large (egg)(beaten)


  • 2 tbsp soya sauce(low sodium)

Directions

  • Heat oil in a large nonstick skillet over high heat.
  • Add onion, garlic, pepper, mushrooms and other veggies; stir-fry until tender.
  • Add cooked rice; stir-fry 2 minutes.
  • Push rice mixture to sides of pan, forming a well in center.
  • Add egg to center of pan, and let cook 30 seconds; toss with rice, and stir-fry until egg is cooked.
  • Stir in soy sauce cook until thoroughly heated
